These muffins are always a hit amongst family and friends. They’re quick and easy to make. Go to Sherwood Reserve, set up a picnic near the pond or under the trees and enjoy nature. Hope you all enjoy as much as we do!

What to prepare

  • 3 cups Edmonds sweet muffin mix

  • 3 eggs

  •  cup vegetable oil

  • ½ cup cold water

  • 5ml vanilla essence 

  • ½ cup white chocolate chips 

  • 1 cup frozen blueberries 

  • 18-24 muffin cases

How to make them

  1. Preheat oven to 190°C.

  2. Place muffin mix, eggs, vegetable oil, water & vanilla essence into a mixing bowl.

  3. Stir briskly with a wooden spoon until mixture is smooth &

    creamy, lump free.

  4. Add in the chocolate chips and blueberries, mix gently.

  5. Place muffin cases into the muffin tray.

  6. Spoon batter into muffin case fill.

  7. Bake for 20-25 minutes or until skewer inserted into the

    centre comes out clean.

  8. Once cooked, place on a wire rack to cool completely, then serve with a flask of tea!
