Cadi’s Blueberry & White Chocolate Muffins

What to prepare

3 cups Edmonds sweet muffin mix
-
3 eggs
-
⅔ cup vegetable oil
-
½ cup cold water
-
5ml vanilla essence
-
½ cup white chocolate chips
-
1 cup frozen blueberries
-
18-24 muffin cases
How to make them

Preheat oven to 190°C.

Place muffin mix, eggs, vegetable oil, water & vanilla essence into a mixing bowl.

Stir briskly with a wooden spoon until mixture is smooth &
creamy, lump free.

Add in the chocolate chips and blueberries, mix gently.

Place muffin cases into the muffin tray.

Spoon batter into muffin case fill.

Bake for 20-25 minutes or until skewer inserted into the
centre comes out clean.

Once cooked, place on a wire rack to cool completely, then serve with a flask of tea!
