Philip’s Knockout Mango Salsa

What to prepare

1-2 ripe mangos
-
1 handful of mint
-
1 handful coriander (or substitute flat parsley if you prefer)

1 fresh chilli
-
1 red onion or couple of shallots

freshly squeezed juice of one lime
How to make them

Skin mango and roughly chop into cubes.

Roughly chop mint and coriander.

De-seed and finely slice the chili.

Chop onion lengthwise and finely slice.

Mix all the ingredients together in a bowl.

Set aside to rest for an hour.
When it’s time to serve that grilled chicken breast, squid,aubergine or whatever takes your fancy, have a bowl of mango salsa ready to partner with it. Makes a great filling for Scott’s Christmas Ham Sliders!
