Philip’s Knockout Mango Salsa

What to prepare

  • 1-2 ripe mangos

  • 1 handful of mint

  • 1 handful coriander (or substitute flat parsley if you prefer)

  • 1 fresh chilli

  • 1 red onion or couple of shallots

  • freshly squeezed juice of one lime

How to make them

  1. Skin mango and roughly chop into cubes.

  2. Roughly chop mint and coriander.

  3. De-seed and finely slice the chili.

  4. Chop onion lengthwise and finely slice.

  5. Mix all the ingredients together in a bowl.

  6. Set aside to rest for an hour. 


    When it’s time to serve that grilled chicken breast, squid,

    aubergine or whatever takes your fancy, have a bowl of mango salsa ready to partner with it. Makes a great filling for Scott’s Christmas Ham Sliders!
