The beautiful expansive fields of Nathan Homestead in Hillpark have been the backdrop of our perfect summer picnics. Flavourful, made ahead chicken adobo on steamed rice, aromatic white wine, and lots of joking around. The perfect picnic in a flash!

What to prepare

  • 1kg skinless chicken thighs

  • 5 tbsp soy sauce

  • 1 brown onion

  • 7 dried bay leaves

  • 4 tbsp rice bran oil

  • 1½ tsp peppercorns

  • 1 head garlic (crushed)

  • ½ cup white vinegar

  • ½ cup water

How to make them

  1. Chop your onion (don't forget your wet tissue to avoid tears!).

  2. Add garlic to pan, add the onion and stir around until lightly golden.

  3. Add in the chicken and sauté until brown. Turn chicken over after a few minutes.

  4. Add the rest of the ingredients, stirring constantly, and bring to a boil.

  5. The chicken will start looking full of colour. It's now time to take out the bay leaves, reduce heat and let it simmer. Cover with a lid.

  6. Once chicken is fully cooked, add some salt to taste and its ready to plate.

  7. Add some chives for garnish, serve with steamed rice and enjoy!
