Simon’s Christmas Tea Cakes

What to prepare

1 ½ cups flour

¼ cup sugar
-
2 tsp baking powder

½ tsp salt
-
½ cup melted butter
-
½ cup apple juice
-
2 eggs
-
1 cup Christmas mincemeat
-
sugar cubes
-
a little rum
How to make them
-
Combine dry ingredients and blend well.

Add butter to juice & eggs, and beat well.

Stir liquid ingredients into dry ingredients; Addmincemeat and stir together.

Spoon into greased muffin cups.

Soak sugar cubes in rum and place on top.

Bake at 180°C for 15–20 minutes.
