Scott’s Christmas Ham & Sliders

What to prepare

Hellers boneless leg ham
for the glaze:

1 cup brown sugar

1 ½ cups pineapple juice
-
1 tsp dry mustard
-
pinch of dried cloves
for decorating:
-
whole cloves
-
pineapple rings
-
glazed cherries
-
toothpicks
How to make them
-
Remove skin from the ham and trim any fat. Weigh the ham to calculate the cooking time based on 10 minutes per 500g, but will need a minimum of 30 minutes for the glaze to become sticky. Pre-heat oven at 160°C.

Diagonal crosscut the ham with 3mm deep cuts 2cm apart.

Stud with a whole clove in each crossing point.

Dress with pineapple rings, pinned with toothpicks, and place a glazed cherry in the middle of each pineapple ring.

Mix all the glaze ingredients in a bowl.

Place decorated ham in roasting pan and baste with the glaze, then place in the pre-heated oven. Baste 3-4 times more with the pan-glazed juices during cooking.

Remove from oven and serve, or store in fridge for when ready.

Assemble sliders with pre-cut ham and include glazed pineapple, cherries and coleslaw.
