Leftover Christmas ham has always been part of our Boxing Day tradition, along with a snorkel at Goat Island.  Sliced ham with fresh buns and coleslaw on the beach before swimming out to see the marine reserve’s sea life is summer in NZ to me.

What to prepare

  • Hellers boneless leg ham

for the glaze:

  • 1 cup brown sugar

  • 1 ½ cups pineapple juice

  • 1 tsp dry mustard

  • pinch of dried cloves

for decorating:

  • whole cloves

  • pineapple rings

  • glazed cherries

  • toothpicks

How to make them

  1. Remove skin from the ham and trim any fat. Weigh the ham to calculate the cooking time based on 10 minutes per 500g, but will need a minimum of 30 minutes for the glaze to become sticky.  Pre-heat oven at 160°C.

  2. Diagonal crosscut the ham with 3mm deep cuts 2cm apart. 

  3. Stud with a whole clove in each crossing point. 

  4. Dress with pineapple rings, pinned with toothpicks, and place a glazed cherry in the middle of each pineapple ring.

  5. Mix all the glaze ingredients in a bowl.

  6. Place decorated ham in roasting pan and baste with the glaze, then place in the pre-heated oven.  Baste 3-4 times more with the pan-glazed juices during cooking.

  7. Remove from oven and serve, or store in fridge for when ready. 

  8. Assemble sliders with pre-cut ham and include glazed pineapple, cherries and coleslaw.
